Annatto Coloring Could Replace Deadly Sodium Nitrite Used in Processed Meats

The natural food coloring annatto may function as an effective replacement for the potentially dangerous meat-curing chemical sodium nitrite, according to a study conducted by researchers from Tarbiat Modares University in Iran and published in the journal Food Chemistry.

Nitrites, another name for the salt sodium nitrite, are preservatives customarily used to keep sausages and other cured meat products from going rancid or otherwise spoiling, and are the traditional source of those meats' pink color. A growing body of research implicating nitrites in a variety of health problems from migraines to cancer, however, has spurred research into more natural alternatives. Some processed meats are already on the market bearing labels proclaiming them "no nitrite added" or "nitrite free."

"The objective of this novel study was to assess the partial replacement of nitrite by annatto as a color additive in sausages under industrial conditions," the researchers said.

Annatto is a natural coloring derived from the seed of the tropical American achiote tree.

The researchers made sausages composed of 55 to 70 percent meat and preserved them with a variety of combinations of nitrite and annatto, ranging from 100 percent nitrite to 100 percent annatto and every 20 percent interval in between. They then analyzed the color, flavor, odor and microbial contaminant content of the sausages after two, 10, 20 and 30 days of refrigeration.

The researchers found that the sausages made with 60 percent annatto and 40 percent nitrites had the best combination of flavor, smell, preservation and color, and was not significantly different in any of those measures than the 100 percent nitrite sausage.

Nitrites are suspected carcinogens, and researchers have found a strong connection between frequent consumption of cured or processed meats and colon cancer. Regular consumption of nitrite-cured meat has also been linked to a higher risk of chronic obstructive pulmonary disease, a hard-to-reverse condition in which the airways narrow.

Being more physically fit appears to slow down damage to the brain's memory centers in the early stages of Alzheimer's disease, according to a study conducted by researchers from the University of Kansas Medical Center and presented at the Alzheimer's Association International Conference on Alzheimer's Disease in Chicago.

"This is the first study to get an inside look into specifically where these changes occur in the brain," lead researcher Robyn Honea said. "We're able to locate the changes associated with fitness to the actual memory region, the hippocampus, which is a key area for Alzheimer's-related atrophy."

Researchers conducted magnetic resonance imaging (MRI) brain scans on 60 adults over the age of 60 who were in the early stages of Alzheimer's disease, along with 56 who did not have any form of dementia. All participants also took part in tests of oxygen consumption during a treadmill exercise, as a measure of overall cardiovascular fitness.

Alzheimer's patients who were more physically fit exhibited less of a decrease in the volume of the brain's memory areas, such as the hippocampus, than those who were less fit.

Prior research has suggested that remaining physically active slows the rate of age-related cognitive decline in people without dementia. More recently, scientists have begun to discover that physical activity may have the same effect on patients who have already developed Alzheimer's disease. A previous study found that overall brain volume decreased less in Alzheimer's patients who were more physically fit. That study, however, did not look at specific areas of the brain.

"The message is essentially if you have Alzheimer's disease, it's not too late to become physically fit," said Sam Gandy, chairman of the Alzheimer's Association's Medical and Scientific Advisory Council.

Another study presented at the conference found that dementia patients who participated in a 12-month caregiver-directed home exercise program had a higher quality of life and experienced fewer falls than patients not undergoing an exercise regimen.

WASHINGTON: A large number of processed and fast foods hide information about phosphorus additives, which can be dangerous for kidney patients,
according to researchers from MetroHealth Medical Center and Case Western Reserve University School of Medicine in Cleveland.

High blood levels of phosphorus can lead to heart disease, bone disease, and even death among patients with advanced kidney disease. Thus, patients must avoid foods with naturally high levels of phosphorus - such as certain meats, dairy products, whole grains, and nuts.

However, the researchers found that it has become an increasingly common practice by food manufacturers to include phosphorus additives, such as sodium phosphate or pyrophosphate, to processed foods.

The additives are used to enhance flavour and shelf life -particularly in meats, cheeses, baked goods, and beverages - and thus it gets difficult for consumers to know whether or not these additives are present in products.

"Calories, fat, and sodium content are required to be listed on nutrition labels, but phosphorus is not. This makes it impossible for kidney disease patients to know how much phosphorus they are eating. For example, we discovered that while chicken is often on dialysis patients' 'Safe List' of foods to eat, chicken from fast food and sit down restaurants often contains this phosphorus additive," said Catherine Sullivan, M S, R D, lead researcher from the Center for Reducing Health Disparities.

It was found that the researchers could significantly lower phosphorus levels among advanced kidney disease patients after teaching them how to avoid foods containing phosphorus additives.

Then 279 advanced kidney disease patients receiving dialysis treatment were assigned to a control group that received usual care or to an intervention group that was taught to avoid additive-containing foods when purchasing groceries or eating at fast food restaurants.

After three months, phosphorus levels declined two and a half times more in the intervention group than in the control group. However, the researchers found that these additives may even affect people with normal kidney function.

Previous research has found that high phosphorus diets appear to lower bone density and increase fracture risk as well.

Depression and Migraines Eased With Exercise and Relaxation

Women who suffer from migraines may be able to reduce the intensity of their pain and their risk of depression by regularly taking part in a simple exercise and relaxation routine, according to a study conducted by researchers from Innsbrook Medical University and published in the Clinical Journal of Sports Medicine.

Thirty women migraine sufferers were randomly assigned either to stay with their normal migraine treatment or to supplement that treatment with specific routine involving 45 minutes of aerobic exercise and 15 minutes of progressive muscle relaxation two times per week. After six weeks, the women who took part in the exercise and relaxation routine reported significantly less intensity of migraine pain than the women in the regular treatment only group.

Women in the exercise and relaxation group also reported significantly fewer symptoms of depression after six weeks than women in the control group. Overall, however, the level of psychological well-being was found to be the same in both groups.

Previous research has suggested that while exercise appears to have no ability to prevent migraine attacks, it does appear to reduce the intensity of pain experienced -- a conclusion supported by the current study.

The researchers were unable to determine the reason for the exercise and relaxation therapy's effect on migraine pain, but they speculated that the treatment might improve feelings of self-efficacy and thus improve people's ability to cope with pain.

Up to 28 percent of people will suffer from a migraine attack at some point in the course of their lives. In any given year, 6 to 15 percent of adult men and 14 to 35 percent of adult women will suffer from at least one migraine attack.

People who suffer from migraines - especially young adults, women who use hormonal contraception, and women who suffer from migraine with aura - have two to three times the risk of undergoing a stroke as those who do not experience migraines.

The amount of electricity in our environment can be overwhelming to think about. Our environment is saturated with invisible EMFs from electrical wiring, appliances, Wi-Fi., computers, appliances, cell phones, hydro and cell phone towers, etc..In a 2008 survey by U.S.A. today, EMF pollution was found to be the #1 environmental concern. This is a valid concern; EMFs affect every aspect of our physical, emotional and mental health and contribute to every disease and disorder. In this article, I will explain how and why electricity in our environment is adversely effecting our health, emotions and mental functioning and what this means when it comes to your child’s health, behaviour, emotional development and ability to learn. I will also explain you how you can become easily empowered so that you and protect and heal yourself. I’m going to share ideas that are easy to apply so you can use to minimize your exposure to environmental electricity. I’m also going to tell you about the most protective and least expensive products available that you can confidently use to protect yourself and family.
Many different terms are used when talking about the electricity that’s in our environment. You’ve probably heard them, electromagnetic field, electromagnetic radiation, magnetic field, electric field, microwave, EMR, ELF and so on. In order to understand what I am presenting here, it’s not important to define these terms or distinguish between the different types of electricity. The important thing is that all chaotic non biological electricity is a threat to our physical, emotional and mental health. I’ve used the term “chaotic” intentionally, because some forms of manmade electricity are used for therapeutic purposes. I’m not going to be talking about therapeutic electricity. I will often be using the term EMF to refer to non biological chaotic electricity; EMF is an abbreviation for electromagnetic field, and is often used to refer to harmful manmade electricity.
Manmade or artificial electricity has been used on the planet for 120 years. Apparently, with the introduction of wireless technology, artificial electricity can now be measured everywhere on earth. Ours is the first generation to be saturated with EMFS. I don’t need to remind you about the pervasiveness, especially in the city of Toronto where we have more than 1,000 cell phone towers dotting our landscape. Our city boasts of having its own Wi-Fi network blanketing the downtown core. The proliferation of electricity in our lives seems to be endless. Merchandisers have started to put microchips in clothing, footwear and other goods and are doing so without our knowledge. These microchips are designed to send encoded electrical messages to data collection agencies that will track consumer habits. Researchers have already micro chipped humans and there is talk of doing so nationwide. In British schools, teachers can already give lessons using Wi-Fi white-boards, and in the near future hand-held Wi-Fi terminals will enable children to ‘interact’ with digital lesson. In the words of the technology’s industry group, the Wi-Fi Alliance: ‘Simply put, Wi-Fi is freedom.’
We cannot avoid EMFs in our environment. We can however effectively safeguard our health and heal our bodies.
Some of you may be wondering whether or not EMF dangers are real. After all, there are researchers and authorities who insist that EMFs are harmless. So, many people believe that the subject of EMF health hazards is controversial and needs more research. The truth is, thousands of scientific research papers are published every year that document the health risks associated with EMFS. These studies have shown that all EMFs, regardless of range or frequency have damaging consequences. Since the 1970’s studies have repeatedly shown a direct correspondence between how close one lives to powerlines and transformer and power stations and the incidence of childhood leukemia and cancer. The largest study involved 29,000 children and looked at data collected over a 30 year period. Incidentally, A 2003 study by Canadian scientist Magda Havas found that 42 of the 60 Canadian cities that were measured, had EMF field intensities at levels greater than the level associated with childhood leukemia. Recently, there have been numerous studies to suggest a direct relationship between brain cancer and cell phone use. Brain cancer tumor risk has been steadily increasing over the last 10 years- particularly among the 20 -29 year olds. You’re probably asking why then, are there educated researchers who are telling us that everyday EMFs are not harmful? The reason is simple. These researchers are looking for a direct cause and effect relationship when none exists. Studies have shown that there appears to be no rhyme or reason to the symptoms. Researchers can take a group of people claiming to be electrically sensitive, expose them to identical frequencies and have reports of many different kinds of symptoms. One person who claims to be sensitive to EMFS will have an adverse reaction to one type of EMF but not to anther, while a 2nd electrically sensitive person will express no reactions at all So, the researchers who are looking for direct cause and effect relationships conclude that symptoms in response to EMF exposure are psychosomatic-an artefact created by the power of suggestion.
A large body of research comes from Sweden where they have officially recognized electromagnetic hypersensitivity or electro sensitivity as a medical condition. This is a condition where someone experiences physical or psychological symptoms that are aggravated by EMFs at levels that most people can tolerate. Most common symptoms include: headaches; tinnitus; fatigue; nausea; stress; poor concentration; sleep disorder; pain; burning sensation; skin conditions; and rashes.
Dr. Ollie Johanssen, a Swedish neuroscientist has declared that based on his research, he expects 50% of the world population will exhibit symptoms of electro hyper sensitivity by the year 2017. This might seem to be an extremely bold claim. Keep in mind, however, that the effects of EMFs are cumulative, making us increasingly more sensitive to EMFS as we get older.
In addition to the symptoms of electro sensitivity, EMF exposure is also linked to many other physical complaints, emotional disorders, and mental conditions.
The question that next arises is, why are EMFs implicated in so much illness and disorder? Very simply, it is because we are electrical beings with internal wiring. Every bodily function depends on electrical activity that takes place within and between cells. Our body’s electrical system works to initiate every action within our body. It balances the activity of every organ.. Our body’s electrical system works to balance the activity of our organs. It represents the very foundation of the healing process. The flow of electricity in the body is as critical to the body’s well being as the flow of blood.
Our bodies conduct electricity that enters it. Studies have shown that when this happens, our electrical processes are disturbed, and cell functioning is disrupted. The electricity in electrical wiring and appliances changes the atomic structure of the cell and breaks the bonds that exist in and between cells. This triggers changes in blood chemistry, induces free radicals, disrupts the cells ability to control PH levels, enzyme activity, cell reproduction, synthesis, functioning and energy transfer. A healthy and permeable cell membrane wall is needed for effective communication and coordination of activity between cells, tissues, organs and nerves. When exposed, to EMFS, the protein in the cell membrane wall is weakened and the cells react as though threatened by an invader. The cell enters into a state of emergency. Besides impaired communication and coordination, the reduced membrane permeability also makes it difficult for nutrients to enter and for toxins to exit. As a consequence, we are not benefitting from nutrients and healing therapies to the extent that we should be, When the cell is in a state of emergency, instead of producing water and carbon dioxide, the cell produces hydrogen peroxide and carbon monoxide. In short, the cell begins to ferment. The state of emergency behaviour is passed on to each subsequent generation of cells.
There is also constant unending tension in the nervous system, that puts our bodies into a state of chronic stress. Most scientists agree that the mechanism whereby EMFs impact the body’s nervous system is explained by the principle of cyclotronic resonance. (The word cyclotronic refers to spinning electrons. According to the principles of Cyclotronic resonance, energy is actually transferred from the electrical wiring in our buildings into the nervous system of people within the building.) Cyclotronic resonance causes the adrenal system to generate cortisol, stress hormones, and also causes ions, also known as electrolytes, (electrical particles) to get kicked out of the cells. Specifically calcium, lithium, sodium, magnesium and potassium are kicked into the blood stream to either collect in joints or be inappropriately eliminated. These ions, or electrolytes govern cell metabolism, calmness, mood and memory and are involved in most of the body’s chemical reactions. Eventually, our immune systems begin to collapse.
Additionally, studies have found that EMF exposure more than doubles the release of mercury vapour from dental fillings, triggers the expression of disease causing genes, damages DNA and interferes with DNA repair. Studies have also shown that cancer cell division is 24 times greater when the cancer cells are exposed to EMFs.
It seems that the pineal gland is the organ most impaired by EMF exposure. This organ produces hormones and neurotransmitter that tune and regulate the hypothalamus, central nervous system and immune system. EMF exposure suppresses the pineal gland activity leading to the reduction of 2 important chemical messengers: melatonin and serotonin. Both are involved in regulating numerous processes and functions, however, serotonin has enormous influence over many brain functions.

Executive functions develop during childhood through to young adulthood. This is when we learn to,
resist distraction by salient stimuli; focus attention on stimuli that are important; be goal oriented; organize and direct activity so that goals are achieved in ways that are appropriate and rule abiding; engage in abstract thinking; make predictions about the future; reason; think from another’s point of view; evaluate ideas; reflect on ones own work, be flexible in thinking so that self correcting is possible; keep track of time; simultaneously attend to more than one task; engage in group dynamics; wait patiently; finish work on time; and seek assistance when needed.
As I mentioned previously, executive functions become impaired when the pineal gland produces less serotonin in response to EMF exposure. Executive functions are also impaired when EMF exposure disrupts the electrical activity within and between brain cells – which are specifically specialized nerve calls called neurons. Executive functioning is also impaired by the constant unending stress caused by EMFS, which in turn puts the body into a fight or flight response. The reason being, that part of this response is to reduce the blood flow to the Frontal lobes/ forebrain, where executive functioning takes place; this means there is less energy available for executive functions. The loss of important electrolytes through the process of cyclautronic resonance also impairs executive functioning. So, there are many ways in which EMF exposure interferes with thought processes, learning, memory, emotional control and behaviour. And the disruption in executive functioning has wide reaching implications during childhood.
There is seldom a single cause for disorders and illness. So, of course, EMFS are not necessarily the cause for these. However, EMFs can be seen to disturb emotional and mental functioning, promote and accelerate illness and interfere will healing, Minimizing exposure to EMFS and obtaining effective EMF protection are essential for healing and prevention.
Based on the research, when you reduce your exposure to EMFs your healing energies flow more freely and the body begins to heal. Your nervous system and acupuncture meridian system are released from constriction. A calmness sets in. • Use a wired network instead of a Wi-Fi network
• Use wired speakers and other electronic components instead of wireless
• When considering an alarm system for your home, opt for a wired system instead of a wireless system.
• When using the computer, try not to hold onto the mouse and learn keyboard strokes to replace mouse functions
• Try to locate the computer tower printer and wiring aware from where you sit
• Opt for LCD Flat Screen computer monitors
• Avoid placing a laptop computer on your lap when you are using it
• Store your cell phone in a case or backpack or purse where it will not be right next to your body. When sleeping keep it at least 3 feet away from your bed
• Place your electric alarm clock at least 3 feet away from your bed
• Electric appliances and devices are surrounded by electric fields even when not turned on. So unplug these at night if they are in close proximity to your bed.
• Instead of fluorescent bulbs, use incandescent or full spectrum bulbs
• If you must use a cell phone or cordless phone, use the speakerphone when possible. Don’t use a Bluetooth or earplugs that transmit radiation directly into the ear canal.
• Try to avoid using a cell phone or laptop in a car or bus where the EMFs are intensified
• Stay 2 to 3 feet away from someone who is talking on a cell phone.
• avoid using waterbeds that need electric heaters
• Substitute electric razors and can openers with manual versions
• Find alternatives for electric blankets
• Substitute a heating pad with a hot water bottle
• Washing machines, clothes dryers, and dishwashers have large EMFs, especially when high efficiency. So try to run full loads mostly. If someone is sleeping with the head of the bed on the wall behind these machines, don’t operate the machine when they are sleeping
• The larger the tv screen the stronger and larger the EMF, sit far back and again, don’t operate if someone is sleeping directly behind the tv wall
When using appliances, try to stand 2 to 3 feet back. For instance, when cooking on an electric stove, try to use the back burners more often
Children have relatively more brain fluid and thinner skulls than adults, so they are more susceptible to EMFs than adults. A 1 year old child can absorb almost twice as much radiation per kilo as an adult. Try to teach EMF minimizing practices to your children while they are young so that it becomes part of their lifestyle. Don’t use a cell phone or cordless phone while holding a child. Most baby monitors use digital wireless technology and the EMFs that they produce can be more powerful than living near a cell phone tower. So concerned mothers will want to reconsider using these devices.
Lastly, support groups that want to keep cell phones and Wi-Fi networks out of schools, public buildings and public transportation. Let your local Member of Parliament know that you are opposed to the government’s decision to ban incandescent light bulbs.
